In 1982, Ernie Colicci travelled from Italy to London with the humble aspiration of selling ice cream in the UK. After meeting wife and business partner Josephine, Colicci acquired its first ice cream van, soon after that its second and third. Their attention to outstanding customer service and quality soon found them catering to some of the largest events in the United Kingdom including RHS Chelsea Flower Show, Royal Ascot & The British Open Golf with a fleet of over 20 vans.
Keen to diversify their offering, Ernie and Josephine began moving into permanent food and drink kiosks beginning a relationship with the Royal Parks in Hyde park. This then secured them a contract for 12 permanent kiosks Hyde, St James & Green Park. Today they operate across a mix of 30 different permanent sites including cafes, kiosks, restaurants & beautiful vintage ice cream trucks.
The Challenge:
With a large proportion of Colicci's business based in London’s Royal Parks, they’re hugely subject to seasonality and weather changes. Colicci needs to be reactive to both seasonal peaks in summer, and unexpected event or weather-driven peaks over specific weekends.
The Solution:
Invest in solid core teams for each site, then prepare for the busy season by adding layers of skilled flexible workers who can supplement during sunny spells and big events.
